Meet Agnes, Our Chief Cooking Officer and Central Europe Native

Three years ago, our Chief Cooking Officer, Agnes, who was born on a farm in Central Europe among her eight brothers and sisters, visited Warsaw, Poland and was shocked to see schmaltz, which is pure pork fat, on the menu at an upscale restaurant, served with pieces of bacon.

“I thought, this is what people eat when they’re poor, and here I am in this fancy restaurant and they’re serving it as an appetizer,” she said. “It made me realize that Central European food has sort of rediscovered its peasant roots, and yet has stayed just as genuine.”

One big reason that our own Mount Salem Kitchen products are just as authentic here across the pond is thanks to Agnes herself, who learned to cook by memory from her mother and grandmother on a woodburning stove in their farmhouse kitchen.

Agnes joins our family

Now a naturalized U.S. citizen after coming here over 20 years ago, Agnes has been with the Mount Salem family for over 10 years after she began as a vineyard laborer and progressed to vineyard master and assistant winemaker with our sister company, Mount Salem Vineyards.

However, she always naturally gravitated toward the vegetable and herb gardens and the kitchen on our farm, and has been a huge influence in refining what were family recipes into what are now our Central European food products.
