Delectable Food Events Including Free Ribs Are On the Calendar at Mount Salem Kitchen
Tomorrow – Saturday, July 31 – will be a beautiful day here in Hunterdon County, and we’ll celebrate in everyone’s favorite way – with food.
Visit us at 54 Mt Salem Road, Pittstown from 2-5 p.m. for complimentary, first-come first-served pork ribs, smoked Alpine-style. We’ll start them off with a dry rub of herbs beloved in the region, then once they’re sizzling in the smoker, we’ll brush them with vinegar, salt, beet sugar and seasonings.
This style of smoking yields rendered (allowing the fat to drip away) succulent ribs that hone in on the flavors of the meat and seasonings. Don’t wait too long to come by, though – once they’re gone, they’re gone!
Salzburg BBQ chicken Pairing event Aug. 7
If you can’t make it tomorrow, we’ll be back in the kitchen next Saturday, too, on Aug. 7 with our Pairing featuring three wines and another summer dish – Salzburg BBQ chicken.
Here, you’ll sample three wines while watching us prepare this chicken dish that’s slow-roasted and grilled in a technique familiar to East Carolina BBQ fans. However, this technique comes from Central Europe, likely carried by German and Austrian immigrants who settled in the American southeast 200+ years ago. Don’t worry – you’ll leave with the recipe.
To make the Salzburg BBQ chicken, we’ll marinate it in vinegar, beet sugar and seasonings and then grill it. Every 10 minutes or so, we’ll dip the chicken back into the marinade before returning it to the grill. After an hour, your patience is rewarded with some seriously moist, tender and flavorful chicken thighs. We’ll serve it alongside house-made coleslaw – Vienna-style – and flatbread.
All the while, enjoy our 2019 Riesling, Albariño and Blaufränkisch, and maybe a Library wine, too.
