
A Simple, Perfect Pairing at Mount Salem Vineyards
Every day at Mount Salem Vineyards, we work to create fine artisan products of our own land and ingredients. However, that philosophy never stopped at wine. We feel just the same about food, which is why for nearly two decades, we’ve prepared homemade fare to complement our wine at our regular Pairing events.
At our Pairing last weekend, we shared our onion tarts, which have been favorites of our visitors for nearly two decades. We can see why – this bit of brunch features sauteed onions in a mixture of eggs, milk and goat cheese, with hints of bacon and thyme, all baked in tart shell made only of flour, butter, egg yolk and cool water.
What makes it even better is when all of the ingredients of this handcrafted tart are sourced within just a few miles of our Pittstown farm. So, that’s what we did – and we used the online guide at hunterdon579trail.com to do it.
Our Process: The Onion Tarts We’re Serving Saturday Couldn’t Be More Locally-Grown
Unsurprisingly, all of our guests that day gladly accepted our onion tart offering, and especially couldn’t resist the tart’s chunks of bacon from Blue Jingler Farm and dollops of fresh chevre from Gorgeous Goat Dairy. They reminisced about their trips to countries like Germany and France, where similar flavors and recipes reign. And finally, every plate was left empty when we cleared the table.
We paired the tarts with our Riesling, Pinot Grigio, Chardonnay and Rose wines, which, while all quite different from one another in many ways, have one aspect in common – a bright acidity that complements this dairy-based tart without overwhelming its flavors, or textures.
It was a simple, straightforward afternoon, where visitors looking to decompress, gather with friends or just taste some good wine headed to the hills of Hunterdon County for a few sips and bites of the freshest and most local fare available.

But as simple as it was, it means a lot to us – and to our guests – who are sometimes too busy to prepare it themselves. Which is why we’ve always been more than happy to stay true to our roots – literally and figuratively – and bring the farm to their tables.
