Our Next Pairing Featuring Swordfish Stimpirata is Saturday, Aug. 21

Arriving, as always, much too quickly, summer is now coming to an end. But at Mount Salem Kitchen, we’re making the most of it with our Pairing Saturday by featuring local Hunterdon County vegetables that are now at their peak.

Come and visit the farm on Saturday, Aug. 21 from 12-2 p.m. for a Pairing, where you will see a seasonal dish prepared and plated up-close while you sample three of our wines and engage with our chef and other guests.

What you’ll enjoy

We’ll be making North Atlantic swordfish prepared in the Italian Stimpirata style, which is when the steaks are grilled or seared in a skillet and then sauced with finely chopped celery, onion and capers that are sauteed in olive oil and vinegar. To us, this dish speaks of the sea with a twist, thanks to the slight crust on the seared swordfish and the briny crunch of its sauce.

We’ll serve it with roasted eggplant topped with sauteed tomatoes, garlic and herbs as well as fresh bread or couscous – an echo of the Southern Mediterranean or Adriatic regions, which is where this dish hails from. But before that, we’ll start with Roman sprouts and a roasted garlic and cannellini spread.

You’ll enjoy it all alongside our Riesling 2019 and Gruner Veltliner 2018 – two dry and crisp favorites here at Mount Salem Kitchen – as well as our Blaufränkisch Reserve 2019, a red that is just complex enough to not overbear this seasonal, authentic and healthy meal.

We began offering Pairings years ago when we would prepare food to complement our wines for our guests, which led to requests for private events like luncheons and dinners. This then prompted people to ask for recipes and eventually cooking classes. They are now a staple here, often organized by people to celebrate a special event, or simply an excuse for food and wine lovers to get together.
