Get Your Vincotto Before It’s Too Late!
We have good news and bad news for lovers of our Vincotto, a deep, dark syrup made from a dense reduction of red wine. The bad news is that we have made the difficult decision to discontinue the luxurious addition to meats, hard cheeses, ice cream or fresh fruit.
But, the good news is that we currently have about 24 bottles left! We plan to sell out of the product, which translates in Italian to “cooked wine,” by the holiday season, so now is the time to stock up.
Mount Salem Kitchen is the sister company to Mount Salem Vineyards, which produces fine wines from grapes indigenous to Austrian wine regions. To make the Vincotto, we combine the tannin, acidity and phenolics of our red wine with a bit of natural sugar, and then condense it so that the flavor is very intense.
However, our wines are almost too tasty – we have discovered that they’re simply too good to be cooked! To make our Vincotto, it takes six months to grow the grapes, at least two years to make the wine from those grapes, and then six hours to simmer it over flame.
