Agnieszka Bućko created this cookbook as a wedding gift for her daughter, Emilia. It was, she hoped, a way to share family recipes that she learned from her own mother and grandmother in their farmhouse kitchen. The recipes are authentic, some unique to her region in northeastern Poland, and offer an introduction to Polish cuisine that goes far beyond pierogi, stuffed cabbage and kielbasa, although they are included as well.

But first Agnieszka had to write the recipes down, because like many in the Old World she learned to cook from memory, just as her mother and grandmother had. So began her culinary journey, now in America, of making each dish and – as she did – writing in her native Polish the ingredients, measurements, steps, and skills required. She then translated the recipes into English and assembled this book. Also included are dishes with a more modern touch that Agnieszka created herself or learned from others after she moved to America in 1998.

In addition to the recipes, Agnieszka shares memories as a proud farmgirl coming of age in communist-era Poland, when life was so very hard that eating well was an important source of joy and comfort. You will find these pearls in the Preface, Introduction and at the beginning of each section of this book, which you are encouraged to devour as well.
